Avocado and yogurt dip

Give your lunch box a healthy boost with this zingy dip teamed with crunchy fresh veg

Ingredients

  • 1/2 Co-op ripe and ready to eat avocado
  • 150g Co-op natural yogurt
  • Juice of 1/2 lime
  • 1 tsp ground coriander
  • 10g fresh coriander
  • 2 Co-op pitta breads, toasted and sliced
  • 1 red pepper, deseeded and cut into strips
  • 2 carrots, sliced into batons
  • 3 radishes, halved

Method

 

  • Scoop out the flesh of the avocado and blend
  • Add the yogurt, lime juice, ground coriander and fresh coriander
  • Blend again, until smooth
  • Serve with pitta bread, red pepper, carrots and radishes
