Cajun steak tacos

The homemade Cajun rub makes the British steak extra tasty

Ingredients

  • 2 Co-op soft tortillas
  • 2 tbsp Co-op olive oil
  • 1 tbsp Cajun rub
  • 200g Co-op British sirloin steak
  • 1 red onion, sliced
  • 1 1/2 peppers (any colour), deseeded and sliced
  • 1/2 x 400g can kidney beans, drained
  • 1/4 Co-op British iceberg lettuce
  • 2 tbsp sour cream
  • 2 tbsp fresh coriander, roughly chopped (optional)

Method

  • Preheat the oven to 200°C/fan 180°C/Gas 6
  • Brush the tortillas with 1 tbsp of olive oil, scrunch 2 pieces of foil into cylinders and fold the tortillas in half around them
  • Lay on a baking tray and cook for 10 mins
  • Work the Cajun rub into the steak and fry in the remaining oil for 3-5 mins on each side
  • Remove from the pan, slice thinly and set aside
  • Add the onion and peppers to the pan and fry for 5 mins
  • Then add the steak, along with the kidney beans, and heat through for 2 mins
  • To serve, shred the lettuce and divide between the tacos, then add the beef mixture and top with the sour cream and coriander, if using
